Among the must-tries is the&nbsp;Tatatito Crispy Grilled Sisig, a mix of textures from the soft and chewy pig&#39;s ears to the crunchy chicharon-like bits. The&nbsp;Adobong Baby Pusit, Gising Gising Sigarilyas, is made of&nbsp;vegetables cooked in rich coconut milk and chili that perfectly balance creaminess with a spicy kick.&nbsp;

The secret to this well-loved dish is in the marinade. First, the local Ilonggo vinegar made from coconut forms the base that gives Jay-j&#39;s Inasal its&#39; distinct flavor. Then, they mix it with a few secret herbs and spices.

&nbsp;The Davao Region is well represented by another grilled Filipino specialty, grilled tuna, which comes in two variants: panga and belly. With Cebu&#39;s pride and joy, the Sinuglaw offers the perfect combination of grilled pork and fresh tuna cubes.

At Jay-j&#39;s, they also have Bicolano cuisine, known for two things &ndash; coconut milk and chili peppers. And the two dishes that best represent these two ingredients are found in Jay-j&#39;s expansive menu. These are Bicol express and Laing.&nbsp;

Toyo Eatery is a contemporary Filipino restaurant tucked away in the corner of Chino Roces Avenue in Makati. It&rsquo;s helmed by Chef Jordy Navarra, who had previously trained at The Fat Duck in the UK and&nbsp;Bo Innovation in Hong Kong&nbsp;before opening Toyo Eatery in March 2016.

It is about how Chef Navarra draws inspiration from the local culture and heritage to create contemporary, often playful interpretations of Filipino cuisine.

Toyo Eatery offers both ala carte and tasting menu options. Chef Navarra&rsquo;s tasting menus for a reasonable price. The Samples of the course tasting menu they serve are;&nbsp;&nbsp;tomato meringue with ginataang langka&nbsp;amuse-bouche. Reminiscent of a French macaron, it dissolves in the mouth to reveal the Filipino flavors of jackfruit cooked with coconut milk. The&nbsp;kilaw of wild talakitok, lime, and sesame,&nbsp;it is Filipino fish ceviche.

A dish of&nbsp;tamban, malunggay, young corn, and Sichuan, deep-fried and dusted with finely ground Sichuan peppercorns. The dish of&nbsp;&ldquo;relyenong&rdquo; pusit with mustasa&nbsp;refers to stuffed squid made with mustard greens, coated with a slick black paste and&nbsp;Lugaw. It&nbsp;is rice porridge or congee, made with crab Roe and burnt kalabaza (squash) with coconut vinegar.
